In order to maintain intact all its qualities, the whole ham must be preserved in a fresh and sheltered place. But never in the refrigerator! Simply recover it with a cotton linen or place it in a ham bag.

If you consume ham within relatively spaced intervals, protect the cut zone with pieces of pork rind or lard, or withdraw the first section of flesh which will have dried a little. The latter could be used in the preparation of various recipes. Thus savours of your ham will be preserved. However take care to consume your ham, once started, within a period of three to four weeks.
